Roasted Chicken & Corn Tortilla Soup Recipe

  • 1 Archer Farms™ Roasted Chicken
  • 4 cups Market Pantry™ Chicken Broth
  • 1/2 cup Archer Farms™ Chipotle Salsa
  • 1/2 cup Archer Farms™ Tequila Lime Salsa
  • Juice of 1/2 lime
  • 1/2 cup chopped fresh cilantro
  • 1 cup Archer Farms™ Yellow Corn Tortilla Chips
  • Market Pantry™ Cheddar Cheese (optional)
  • Market Pantry™ Sour Cream (optional)
  • Salt and pepper
  1. Remove meat from roasted chicken and chop.
  2. Heat chicken broth, chicken meat and salsas together in a large saucepan over medium-high heat.
  3. Add tortilla chips and simmer for 10 minutes.
  4. Stir in cilantro, lime juice and salt and pepper, to taste.
  5. Serve immediately garnished with cheese and sour cream if desired.
