Roasted caramelised peaches Recipe

  • 2 tbsp honey
  • 1 tbsp unsalted butter
  • 55g/2oz caster sugar
  • 2 peaches, cut in half and stone removed
  • 2 slices Stilton, to serve
  1. Preheat the oven to 220C/425F/Gas 7.
  2. Heat the honey, butter and sugar in a non-stick frying pan for a few minutes.
  3. Add the peach halves to the pan and allow to caramelise for a few minutes.
  4. Transfer to the oven and heat for 8-10 minutes.
  5. Remove from the oven, transfer to a serving plate and serve the Stilton slices alongside.
