Roasted almonds Recipe

  • 350g/12oz organic whole almonds with the skin on
  • 3 tbsp light olive oil
  • 1 tsp cayenne
  • 1 tsp paprika
  • 1 tbsp Maldon sea salt
  • 1 tsp freshly ground black pepper
  1. Preheat the oven to 180C/350F/Gas 4.
  2. Toss all the ingredients together in a large bowl. Tip on to a roasting tray or use a large terracotta dish. Cook in the oven for 20-25 minutes tossing frequently. Drain well on kitchen paper before serving. They may need a little more salt so have a taste before serving.
