- 1 (3 pound) beef tenderloin
- 3/4 cup coarse-grain mustard
- 3 tablespoons honey
- 2 teaspoons wasabi paste
- 18 small (4 inch) pocket bread rounds, cut in half
- In a 9- by 13-inch pan, roast tenderloin in a 400 degrees F oven until thermometer inserted in center of thickest part reaches 135 degrees F for medium-rare, about 50 minutes. Cool beef and thinly slice. Arrange slices, overlapping, on a platter.
- In a bowl, stir together mustard, honey, and wasabi paste until well blended.
- Tuck slices of beef into pocket bread halves and add mustard sauce to taste. Serve.
