Ricotta and banana chocolate-dusted muffins Recipe

  • 110g/4oz self-raising flour
  • 110g/4oz butter, plus extra for greasing
  • 2 tbsp caster sugar
  • 2 free-range eggs
  • 3 tbsp ricotta
  • 1 banana, mashed with a fork
  • cocoa powder for dusting
  1. Preheat the oven to 190C/375F/Gas 5.
  2. Grease a six-hole capacity muffin tin with some of the butter.
  3. Place the flour, butter, sugar, eggs and ricotta into a food processor and blend until combined.
  4. Place the banana into a bowl and mash with a fork. Then stir into the muffin dough mixure.
  5. Divide the mixture into six and fill the muffin tin. Transfer into the oven to bake for 12-15 minutes, until the muffins are risen and golden and a skewer comes away clean when poked into the middle of the muffins.
  6. To serve, dust with cocoa powder.
