Rice Cake with Fruit Recipe

  • 2 cups cooked short grain white rice
  • 2 cups fresh orange juice
  • 2 bananas, ripe
  • 1 tablespoon fresh lemon juice
  • 1 egg yolk
  • 3 egg whites
  • 1 1/3 cups fat free powdered milk
  • 1/3 cup sugar
  1. Preheat the oven to 350°F.
  2. Puree all ingredients in blender; transfer to a glass baking dish.
  3. Set baking dish in a larger pan filled with 2 to 3 inches of water.
  4. Bake for 30 minutes.
