Rice and Veggie Salad with Knorr® Sides Recipe

  • 1 (5.4 ounce) package Knorr® Rice Sides™ – Herb & Butter
  • 1 orange bell pepper, seeded and chopped
  • 1 cucumber, peeled and sliced
  • 1 (10.5 ounce) container cherry or grape tomatoes, halved
  • 1 red onion, chopped
  • 1 (10 ounce) package frozen shelled edamame, prepared according to package directions
  • 2 limes, juiced
  • 3 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • Salt and pepper to taste
  1. Prepare rice according to package directions. Transfer to a large bowl and let cool.
  2. Add bell peppers, cucumbers, tomatoes, onion, edamame, lime juice, olive oil, salt and pepper. Mix well and refrigerate until ready to serve!
