Refrigerator Cucumber Chips Recipe

  • 4 cups thinly sliced cucumbers
  • 1/2 cup thinly sliced onions
  • 1/2 cup sugar
  • 1/2 cup white vinegar
  • 1/3 cup fresh dill
  • 2 bay leaves
  • 1 teaspoon mustard seeds
  • 1 teaspoon black peppercorns
  • 1 clove garlic
  1. In a glass bowl, layer cucumbers and onions. In a 2-cup (250-mL) measure, combine sugar, vinegar, dill, bay leaves, mustard seeds, peppercorns, and garlic. Pour over cucumbers.
  2. Cover and refrigerate for 3 days, stirring once each day. Store in refrigerator for up to 2 weeks. Drain before serving.
