- Coarse salt
- 18 ounces fresh or frozen spinach-cheese or other ravioli
- 1/4 cup olive oil
- 1/4 teaspoon crushed red pepper
- 3 tablespoons minced fresh chives or green onions
- 3 tablespoons minced fresh parsley
- 1 tablespoon freshly squeezed lemon juice
- Bring a large pot of water to a boil. Add salt and ravioli, and cook until done according to package directions.
- Meanwhile, in a small saucepan, heat oil over low heat for 3 minutes. Add crushed pepper, and cook 2 minutes.
- When ravioli is done, drain well, and transfer to a large serving bowl. Add the flavored oil, chives, parsley, and lemon juice. Season with salt. Serve immediately.
