- Lime wedges
- 2 tablespoons red colored sugar
- 1 cup chilled light rum
- 1/4 cup lime juice
- 4 teaspoons limoncello liqueur (optional)
- 4 teaspoons simple syrup (see below) or sugar
- 1/2 cup frozen raspberry slush
- Rub rim of martini glass (about 1-cup size) with a lime wedge. Pour red sugar into a saucer. Dip damp glass rims into sugar to coat. Chill glasses.
- Mix together rum, lime juice, limoncello, and simple syrup; keep cold.
- Mound equal portions raspberry slush into prepared glasses. Pour equal portions rum mixture over slush. Use a straw to blend the cooler and sip.
