Quick sticky toffee and banana puddings Recipe

  • 50g/2oz butter
  • 100g/4oz light muscovado sugar
  • 148ml carton double cream
  • 1 tbsp maple syrup
  • 200g/7oz madeira cake
  • 1 banana
  • cream or custard, to serve
  1. Preheat the oven to 190C/375F/Gas 5. Place the butter, sugar, cream and maple syrup in a small pan and heat gently, stirring from time to time until smooth.
  2. Meanwhile, roughly crumble the cake into a small ovenproof dish. Slice the banana and mix with the cake.
  3. Pour over the sauce and bake for 10 minutes until bubbling. Serve warm with cream or custard.
