- 5 large carrots, peeled and grated
- 1/2 cup raisins
- 1/4 cup sweetened flake coconut
- 1 (20 ounce) can pineapple tidbits, drained
- 1/2 cup miniature marshmallows (optional)
- 1/2 cup fat-free plain yogurt
- ground cinnamon to taste
- Mix the carrots, raisins, coconut, pineapple tidbits, mini marshmallows, yogurt, and cinnamon in a salad bowl, and refrigerate for at least 1 hour to blend the flavors. Serve cold.
