- 3 cups tomato-vegetable juice cocktail
- 1 (14.5 ounce) can diced tomatoes
- 1 yellow bell pepper, diced
- 1 cup cucumber – peeled, seeded, and diced
- 1/2 cup diced red onion
- 1/2 cup chopped green onions
- 3 cloves garlic, minced
- 3 tablespoons red wine vinegar
- 2 tablespoons fresh lime juice
- 2 tablespoons Worcestershire sauce
- 1 avocado – peeled, pitted, and diced
- salt
- freshly ground black pepper
- In a medium bowl, mix juice, tomatoes, bell pepper, cucumber, red onion and green onions. Stir in garlic, vinegar, lime juice, Worcestershire sauce and avocado. Season with salt and pepper to taste. Chill for 20 minutes before serving.
