Quick Coconut Muffins Recipe

  • 1 (18.25 ounce) package yellow cake mix
  • 1/2 cup butter or margarine, softened
  • 2/3 cup water
  • 3 eggs
  • 1 (8 ounce) can crushed pineapple, drained
  • 1 cup flaked coconut
  • 1 cup chopped pecans
  • 1 teaspoon rum extract
  • 1 teaspoon coconut extract
  1. In a mixing bowl, beat the cake mix and butter. Add the remaining ingredients. Fill greased or paper-lined muffin cups half full. BAke at 350 degrees F for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
