Quick Aspic Recipe

  • 1 1/2 pints double-strength clarified turkey or chicken broth
  • 1/4 cup white wine
  • 3 envelopes unflavored gelatin dissolved in 1/4 cup cold water
  1. Heat the broth and wine to boiling point. Add the dissolved gelatin. Stir until melted. Cool.
  2. Coat and garnish Turkey en Chaudfroid .
