Quick and Easy Chicken Tortilla Soup Recipe

  • 1 pound boneless chicken breast, cut into cubes
  • 2 (14 ounce) cans chicken broth
  • 1 teaspoon ground cumin
  • 2 cups salsa
  • 2 tablespoons lime juice
  • 1 tablespoon chopped fresh cilantro
  1. Heat a large pot over medium heat; grease with cooking spray. Add chicken; cook and stir until browned, about 10 minutes. Stir in broth and cumin. Bring to a boil; reduce heat, cover, and simmer until flavors combine, about 20 minutes.
  2. Stir salsa, lime juice, and cilantro into the pot; simmer until heated through, 5 to 10 minutes more.
