- 1 tablespoon Safeway SELECT Mayonnaise
- 1 teaspoon Safeway SELECT Seasoned Rice Vinegar
- 1 cup shredded jack or mozzarella cheese
- 2 green onions, thinly sliced
- 3 (8 inch) flour tortillas
- In a medium-size bowl, mix mayonnaise and vinegar; mix in cheese and green onions.
- Spread a third of the filling over half of each tortilla. Fold plain half of tortilla over to cover filling.
- Lightly brown quesadillas in a wide nonstick frying pan over medium heat (3 to 5 minutes); turn carefully and brown other sides (2 to 3 more minutes). Cut each into 4 triangles.
