Potato and Swiss Dinner Frittata Recipe

  • 1/4 cup Archer Farms® organic butter
  • 4 organic potatoes, peeled and cut into 1/2-inch pieces
  • 8 Archer Farms™ organic eggs
  • 1/2 cup Archer Farms™ organic milk
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 2 cups shredded organic Swiss cheese
  • 1/2 cup organic fresh basil leaves, chopped
  1. Heat oven to 350 degrees F. Melt butter in large ovenproof skillet over medium heat. Add potatoes and cook 10 minutes, stirring occasionally, or until barely tender.
  2. Meanwhile, beat eggs, milk, flour and baking powder.
  3. Season potatoes to taste with salt and pepper. Top with cheese and basil. Pour egg mixture over potatoes.
  4. Bake 45 to 50 minutes or until puffed and golden brown.
