- 1/4 cup Archer Farms® organic butter
- 4 organic potatoes, peeled and cut into 1/2-inch pieces
- 8 Archer Farms™ organic eggs
- 1/2 cup Archer Farms™ organic milk
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 2 cups shredded organic Swiss cheese
- 1/2 cup organic fresh basil leaves, chopped
- Heat oven to 350 degrees F. Melt butter in large ovenproof skillet over medium heat. Add potatoes and cook 10 minutes, stirring occasionally, or until barely tender.
- Meanwhile, beat eggs, milk, flour and baking powder.
- Season potatoes to taste with salt and pepper. Top with cheese and basil. Pour egg mixture over potatoes.
- Bake 45 to 50 minutes or until puffed and golden brown.
