- 200g/7oz pork tenderloin, cubed
- 1 yellow pepper, chopped
- 1 tbsp olive oil
- 2 tbsp soy sauce
- 1 tbsp clear honey
- 2 large slices butternut squash
- 1 tbsp olive oil
- 1 tbsp sesame seeds, to garnish
- For the pork skewer, thread the pork and the yellow pepper pieces onto a skewer and drizzle with oil.
- Heat a griddle pan and place the skewer into the pan. Drizzle with the soy sauce and honey and chargrill for 4-5 minutes on each side, or until golden-brown and completely cooked through.
- For the chargrilled butternut squash, heat a griddle pan and place the butternut squash slices into the pan. Brush with oil and cook for 5-6 minutes on each side, or until tender and golden-brown.
- To serve, place the butternut squash onto a plate, top with the pork skewer and sprinkle over the sesame seeds.
