- 255ml/9fl oz white wine
- 1 vanilla pod, seeds scraped out
- 50ml/2fl oz cherry juice from a tin of cherries
- 1 pear, peeled
- 100g/3½oz dark chocolate
- 150ml/5½fl oz double cream
- 1 tbsp sesame seeds
- For the poached pears, place the wine, vanilla seeds and cherry juice into a pan over a medium heat and bring to a simmer.
- Add the pear and poach for ten minutes, until softened.
- For the chocolate sauce, place the chocolate and double cream into a heat-safe bowl, placed over a saucepan of just simmering water. Heat, stirring occasionally until the chocolate has completely melted into the cream.
- To serve, place the poached pear onto a plate and spoon over the chocolate sauce. Sprinkle with the sesame seeds to finish.
