Poached peaches in brandy butterscotch sauce Recipe

  • 2 peaches, skinned and halved
  • 100ml/3½fl oz brandy
  • splash of water
  • 85g/3oz caster sugar
  • 1 tbsp butter
  • splash cream
  1. Heat the oven to 250C/500F/Gas 9.
  2. Place the peaches, brandy, a splash of water and sugar in an oven-proof frying pan and place in the hot oven.
  3. Bake for ten minutes.
  4. Remove from the oven and set the peaches aside leaving the syrup in the pan.
  5. Place on a hob at a high heat and add the butter and cream and reduce for 1-2 minutes.
  6. Pour the sauce over the peaches and serve.
