- 150g/5½oz caster sugar
- 3 cardamom pods
- 50g/2oz dried apricots
- 1 bay leaf
- 50ml/2fl oz water
- 3 tbsp Greek yoghurt
- 1 tbsp honey
- Put all the ingredients except the yoghurt and honey in a small saucepan over a medium heat. Bring to the boil, then reduce the heat to simmer for 15 minutes. Remove from the heat and allow to cool slightly.
- To serve, pour the apricots into a small bowl and serve with the yoghurt and honey.
