Poached apricots with Greek yoghurt Recipe

  • 150g/5½oz caster sugar
  • 3 cardamom pods
  • 50g/2oz dried apricots
  • 1 bay leaf
  • 50ml/2fl oz water
  • 3 tbsp Greek yoghurt
  • 1 tbsp honey
  1. Put all the ingredients except the yoghurt and honey in a small saucepan over a medium heat. Bring to the boil, then reduce the heat to simmer for 15 minutes. Remove from the heat and allow to cool slightly.
  2. To serve, pour the apricots into a small bowl and serve with the yoghurt and honey.
