Pitas with Tzatziki Recipe

  • 2 cups low-fat plain Greek-style yogurt
  • 1 cup peeled, grated cucumber, spun dry in salad spinner
  • 4 cloves garlic, grated
  • 1 teaspoon freshly squeezed lemon juice
  • 3/4 teaspoon kosher salt
  • 1/8 teaspoon ground red pepper
  • 6 (6 inch) whole-wheat pitas
  • 1 tablespoon extra virgin olive oil
  1. Mix together yogurt, cucumber, garlic, lemon juice, salt, and pepper in medium bowl. Chill, covered, 1 hour.
  2. Brush both sides of pitas lightly with oil. Heat in batches in large skillet over medium heat, 3 to 4 minutes per side, until golden and puffed. Serve pitas with tzatziki and souvlaki (Recipe name: Pork Souvlaki).
