Pimiento Cheese Recipe

  • One 4-ounce jar chopped pimientos, drained
  • 1 cup mayonnaise
  • 1 garlic clove, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon dry mustard
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon ground red pepper
  • 2 cups grated Cheddar (8 ounces)
  • 2 cups grated Colby (8 ounces)
  1. Combine pimientos, mayonnaise, garlic, lemon juice, dry mustard, Worcestershire sauce, and red pepper in a medium bowl. Beat with a wooden spoon or an electric mixer at medium speed until blended.
  2. Add grated cheese and beat until the consistency of cottage cheese.
