- 3 small zucchini, sliced
- 3/4 cup chopped green pepper
- 1/2 cup chopped onion
- 1 (15.5 ounce) can kidney beans, rinsed and drained
- 1/4 cup vegetable oil
- 3 tablespoons vinegar
- 1 1/2 teaspoons garlic salt
- 1/4 teaspoon pepper
- In a bowl, combine all ingredients. Cover and refrigerate at least 4 hours, stirring occasionally.
