- 4 bell peppers, yellow, red, orange
- 2 tablespoons minced onion
- 6 tablespoons canola oil
- 3 tablespoons vinegar
- 1 tablespoon granulated sugar
- 1/2 teaspoon salt
- coarsely ground pepper
- Wash and stem peppers. Grill or broil until blackened on all sides. Plunge in cold water and peel. Slice, discarding seeds. Pat dry.
- Combine remaining ingredients. Add peppers. Chill 30 minutes or up to 24 hours.
