Pickled Bell Peppers Recipe

  • 4 bell peppers, yellow, red, orange
  • 2 tablespoons minced onion
  • 6 tablespoons canola oil
  • 3 tablespoons vinegar
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • coarsely ground pepper
  1. Wash and stem peppers. Grill or broil until blackened on all sides. Plunge in cold water and peel. Slice, discarding seeds. Pat dry.
  2. Combine remaining ingredients. Add peppers. Chill 30 minutes or up to 24 hours.
