Pesto Shrimp Salad Recipe

  • 1 (16 ounce) package Archer Farms™ Mezzi Tubetti pasta
  • 1 (16 ounce) package frozen cooked shrimp, thawed, tails removed, cut in half
  • 1 (2.25 ounce) can sliced ripe olives drained
  • 1 cup grape tomatoes
  • 1/4 cup chopped onion
  • 1/2 cup basil pesto sauce
  • 1/2 cup mayonnaise
  1. Cook pasta as directed on package. Run under cold water to cool completely; drain.
  2. Meanwhile, toss shrimp, olives, tomatoes, onion, pesto and mayonnaise in large bowl. Gently stir in cooled pasta. Season to taste with salt.
