Pear and red onion compôte Recipe

  • 1 tbsp red wine vinegar
  • 50ml/2fl oz red wine
  • 2 tbsp soft brown sugar
  • 1 pear, peeled, cored and chopped
  • 1 red onion, chopped
  • 1 clove garlic, chopped
  • handful fresh parsley, chopped
  • large wedge of Stilton, to serve
  1. Place all of the ingredients except the parsley and Stilton into a small saucepan and cook over a high heat for 8-10 minutes, or until reduced and syrupy, then stir in the parsley.
  2. To serve, pour into a bowl, with a large wedge of Stilton alongside.
