- 1 tbsp red wine vinegar
- 50ml/2fl oz red wine
- 2 tbsp soft brown sugar
- 1 pear, peeled, cored and chopped
- 1 red onion, chopped
- 1 clove garlic, chopped
- handful fresh parsley, chopped
- large wedge of Stilton, to serve
- Place all of the ingredients except the parsley and Stilton into a small saucepan and cook over a high heat for 8-10 minutes, or until reduced and syrupy, then stir in the parsley.
- To serve, pour into a bowl, with a large wedge of Stilton alongside.
