Peanut Butter Puffs Recipe

  • 2 cups sifted all-purpose flour
  • 1/2 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup JIF® Crunchy Peanut Butter
  • 2 tablespoons butter or margarine
  • 1 cup milk
  • 2 beaten eggs
  • 1/2 cup SMUCKER'S® Currant Jelly, melted
  • 1/2 cup finely chopped peanuts
  1. Preheat oven to 400 degrees F.
  2. Stir together flour, sugar, baking powder and salt. Cut in JIF(R) and butter or margarine until mixture resembles coarse crumbs. Add milk and eggs all at once, stirring just until moistened.
  3. Fill greased muffin pans 2/3 full.
  4. Bake for 15 to 17 minutes. Immediately brush tops with melted jelly, dip in peanuts. Serve hot.
