Peach soufflé Recipe

  • 3 free-range egg whites
  • 200g/7oz/½tin tinned peaches
  • 1 tsp sugar
  1. Heat the oven to 250C/500F/Gas 9.
  2. Whisk the egg whites to stiff peak stage.
  3. Blend the peaches in a food processor and add the sugar.
  4. Fold the peach coulis into the egg whites and bake in the oven for ten minutes or until risen.
