- 3 free-range egg whites
- 200g/7oz/½tin tinned peaches
- 1 tsp sugar
- Heat the oven to 250C/500F/Gas 9.
- Whisk the egg whites to stiff peak stage.
- Blend the peaches in a food processor and add the sugar.
- Fold the peach coulis into the egg whites and bake in the oven for ten minutes or until risen.
