Peach mousse Recipe
- ½ peach, peeled and finely chopped
- ½ orange, juice only
- 150ml/5fl oz double cream, whipped until stiff peaks form when the whisk is removed
- ½ tsp cinnamon powder
- 1 tbsp icing sugar
- 1 tsp cocoa powder
- 1 tbsp Greek yoghurt
- 1 sprig fresh mint
- For the mousse, place the peach and orange juice into a food processor and blend until smooth.
- In a large bowl mix together the cream, cinnamon and icing sugar, then fold in the peach mixture. Place this mixture into a tall glass.
- To serve, dust with cocoa powder, top with Greek yoghurt and garnish with a sprig of mint.
