- 1 tbsp butter
- ½ peach, peeled and chopped
- 1 tomato, deseeded and chopped
- 1 shallot, finely chopped
- 2 tbsp white wine vinegar
- 1 tbsp white wine
- 1 tbsp honey
- In a small saucepan heat the butter.
- Add the peach and tomato and cook for 2-3 minutes or until they start to soften. Add the white wine vinegar, white wine and honey and cook rapidly for a further five minutes.
- The chutney is ready, once the fruits have broken down slightly and the liquid has been reduced.
