PCP Pie Recipe
- 2 cups white sugar
- 4 large eggs, beaten
- 1/2 cup butter, melted
- 1 tablespoon yellow cornmeal
- 1 tablespoon all-purpose flour
- 1 teaspoon vanilla extract
- 1 (20 ounce) can crushed pineapple, drained
- 1 cup chopped pecans
- 1 cup flaked coconut
- 1 (9 inch) prepared pie crust
- Preheat oven to 350 degrees F (175 degrees C).
- Beat sugar, eggs, butter, cornmeal, flour, and vanilla extract together in a large bowl until smooth; add pineapple, pecans, and coconut and stir. Pour the filling into the prepared pie crust.
- Bake in preheated oven until the center of the pie is nearly set, 50 to 60 minutes.
