Parsleyed Steamed Potatoes Recipe

  • 2 pounds small potatoes (about 2 inches in diameter)
  • 2 tablespoons unsalted butter, softened
  • 1/3 cup finely chopped fresh flat-leaf parsley
  1. Steam potatoes on a steamer rack set over boiling water, covered, until tender, 10 to 15 minutes. Toss with butter, parsley, and salt and pepper to taste.
