Ortega® Gazpacho Recipe
- 1 (24 ounce) jar ORTEGA® Thick & Chunky Salsa
- 2 cups water
- 1 cup finely chopped celery
- 1 cup peeled and diced cucumber
- 1 cup finely chopped green bell pepper
- 1 cup finely chopped red bell pepper
- 1 cup chopped tomato
- 1/4 cup chopped green onion
- 1 clove garlic, minced
- salt and pepper to taste
- 1/4 cup chopped fresh cilantro (optional)
- 1 cup croutons (optional)
- COMBINE salsa, water, celery, cucumber, bell peppers, tomato, green onions, garlic, salt and pepper in large bowl. Cover; refrigerate for 2 hours. Top with cilantro and croutons before serving.
