- 1 tbsp vegetable oil
- ½ onion, finely sliced
- 1cm/½in piece root ginger, finely chopped
- 1 garlic clove, finely chopped
- 100g/3½oz wild mushrooms
- 50g/2oz spinach
- 100g/3½oz ready-cooked udon noodles
- salt and freshly ground black pepper
- 1 tbsp chopped fresh chives, to garnish
- Heat the oil in a frying pan, add the onion, ginger and garlic and stir fry for 1-2 minutes.
- Add the wild mushrooms and spinach and stir fry until softened. Add the noodles, season, to taste, with salt and freshly ground black pepper, and stir well.
- To serve, place the noodle stir-fry into a serving dish and sprinkle with chives.
