- 150g/5Âźoz plain flour
- 2 free-range eggs
- 25ml/1oz water
- 500ml/17fl oz chicken or vegetable stock
- 1 tbsp soy sauce
- ½ tsp chilli flakes
- 1 lime, juice only
- 2 tbsp coriander, chopped
- Mix the plain flour with the eggs and water and mix to form a smooth dough.
- Using a pasta machine, place the noodle dough onto the fine noodle setting. Create your noodles by feeding the pasta through slowly.
- To make the broth, place the chicken or vegetable stock in a deep saucepan with the soy, chilli flakes, lime juice and coriander. Simmer for five minutes then add the noodles. Cook for a further three minutes and serve in a large bowl.
