- 1 cucumber, diced
 - 2 Roma tomatoes, diced
 - 1 small sweet onion (such as Vidalia®), diced
 - 3 tablespoons red wine vinegar
 - 2 tablespoons extra-virgin olive oil
 - 1 clove garlic, crushed
 - 2 leaves fresh basil, chopped
 - 1/2 teaspoon Italian seasoning
 - 1/8 teaspoon freshly ground black pepper
 - 1/8 teaspoon salt (optional)
 
- Combine cucumber, tomatoes, sweet onion, vinegar, olive oil, garlic, basil, Italian seasoning, black pepper, and salt in a bowl; refrigerate until chilled, at least 30 minutes.
