Oregano Cubed Potatoes Recipe

  • 2 medium potatoes, peeled and cubed
  • 2 tablespoons lemon juice
  • 5 1/2 teaspoons olive oil or vegetable oil
  • 1 garlic clove, minced
  • 1 1/2 teaspoons minced fresh oregano
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  1. In a bowl, combine all of the ingredients. Transfer to a greased 1-qt. baking dish. Bake, uncovered, at 425 degrees F for 45-50 minutes or until tender, stirring twice.
