Orange Poppy Seed Cake Recipe

  • 8 tablespoons light cream cheese
  • 1/4 cup SPLENDA® No Calorie Sweetener, Granulated
  • 3 eggs
  • 2 oranges, zested and juiced
  • 1 1/2 cups self-rising flour
  • 2 tablespoons poppy seeds
  1. Preheat oven to 350 degrees F. Line a 8×4-inch loaf pan with baking paper.
  2. Beat cream cheese and cup SPLENDA(R) Granulated Sweetener together until smooth. Add eggs one at a time, beating well after the addition of each one. Add orange rind, cup orange juice, flour and poppy seeds.
  3. Spoon mixture into pan.
  4. Bake 40 minutes or until cooked. Remove from oven.
  5. Combine remaining orange juice and SPLENDA(R) Granulated Sweetener and pour over cake. Let stand for 10 minutes before removing from pan.
