Onion rings with sweet and sour dip Recipe

  • 1 red onion, sliced into thick rings
  • 100g/3½oz self-raising flour
  • 200ml sparkling water
  • 250ml hot vegetable oil
  • 100g/3½oz ricotta
  • 2 tbsp tomato sauce
  • 1 tbsp chives, choppped
  • ½tsp Tabasco sauce
  • ½tsp Worcestershire sauce
  • 1 tsp soy sauce
  1. Heat the oil in a heavy-bottomed pan (CAUTION: hot oil can be dangerous, do not leave unattended).
  2. Make a batter using self-raising flour and the sparkling water and mix to form a batter with a thick consistency.
  3. Coat the onion rings and deep fry for 3 minutes until golden. Remove and drain on kitchen paper.
  4. To make the dip, mix together the ricotta, tomato sauce, chives, Tabasco sauce, Worcestershire sauce and soy sauce. Serve the onion rings with the dip and enjoy.
