- 1 red onion, sliced into thick rings
- 100g/3½oz self-raising flour
- 200ml sparkling water
- 250ml hot vegetable oil
- 100g/3½oz ricotta
- 2 tbsp tomato sauce
- 1 tbsp chives, choppped
- ½tsp Tabasco sauce
- ½tsp Worcestershire sauce
- 1 tsp soy sauce
- Heat the oil in a heavy-bottomed pan (CAUTION: hot oil can be dangerous, do not leave unattended).
- Make a batter using self-raising flour and the sparkling water and mix to form a batter with a thick consistency.
- Coat the onion rings and deep fry for 3 minutes until golden. Remove and drain on kitchen paper.
- To make the dip, mix together the ricotta, tomato sauce, chives, Tabasco sauce, Worcestershire sauce and soy sauce. Serve the onion rings with the dip and enjoy.
