- 1 pound sweet Italian sausage
- 3 tablespoons olive oil
- 1 large onion, sliced
- 2 cloves garlic, pressed
- 1 (8 ounce) can tomato sauce
- 1/4 cup water
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon crushed red pepper
- 1/2 cup sliced stuffed green olives
- 1 (1 pound) loaf French bread, sliced horizontally
- 8 ounces mozzarella cheese, shredded
- Remove sausage from casings and saute sausage until browned. Drain to remove excess oil. Remove from skillet and set aside. In skillet, heat 3 tablespoons olive oil, add onions, garlic and sautee until tender. Add tomato sauce, water, salt, pepper and red pepper. Simmer until tender, about 5 minutes on low.
- Combine together the sausage, onion and sliced olives.
- Place bread on a sheet pan and set on the middle rack under broiler to toast lightly. Remove, and top each half with sausage mix and sprinkle grated mozzarella over all. Broil until cheese melts, about 3 minutes. Watch carefully with oven door open. Remove from broiler, slice and serve.
