New potatoes with beans and olives Recipe

  • 1 tbsp olive oil
  • 25g/1oz butter
  • 200g/7oz cooked new potatoes, quartered
  • 100g/3½oz green beans, trimmed
  • 75g/2ž oz black olives, pits removed, chopped
  • salt and freshly ground black pepper
  1. Heat the oil and butter in a frying pan and fry the potato quarters until they turn golden-brown.
  2. Add the green beans to the pan and cook for 4-5 minutes, until the beans are tender.
  3. Stir in the olives and salt and freshly ground black pepper. Serve as a side dish.
