- 1 tbsp olive oil
- 25g/1oz butter
- 200g/7oz cooked new potatoes, quartered
- 100g/3½oz green beans, trimmed
- 75g/2ž oz black olives, pits removed, chopped
- salt and freshly ground black pepper
- Heat the oil and butter in a frying pan and fry the potato quarters until they turn golden-brown.
- Add the green beans to the pan and cook for 4-5 minutes, until the beans are tender.
- Stir in the olives and salt and freshly ground black pepper. Serve as a side dish.
