Nectarines poached in honey and wine Recipe

  • 2 tbsp brown sugar
  • 1 nectarine cut in half, stone removed
  • 50ml/2fl oz white wine
  • 1 tbsp clear honey
  • 1 tbsp double cream
  1. Heat the brown sugar in a frying pan over a high heat, until melted.
  2. Place the nectarines cut-side down into the sugar and cook for one minute.
  3. Add the wine and honey and boil, unitl the liquid has reduced in volume by half.
  4. Remove the nectarines and keep warm, then add the cream to the sauce, bring to the boil and stir until thickened.
  5. To serve, place the nectarines cut side down onto a plate and drizzle over the sauce.
