Nachos del Sol Recipe

  • 1 (16 ounce) container reduced fat sour cream
  • 1 (1.25 ounce) package taco seasoning
  • 3/4 pound lean ground beef, browned and cooked
  • 1 1/2 cups Mexican blend cheese
  • 8 ounces shredded lettuce
  • 1 small tomato, diced
  • 1 (12 ounce) package triangle-shaped tortilla chips
  1. Mix sour cream and taco seasoning.
  2. Spread mixture on a large plate, then sprinkle with beef, cheese, lettuce and tomatoes.
  3. Place chips with bottom of triangle shape 1/4 inch into the taco mixture to form a sunshine shape around the plate. Serve immediately.
