Mustard-Baked Potato Sticks Recipe

  • Olive oil or vegetable oil cooking spray
  • 1 1/2 pounds russet or yellow-fleshed potatoes, scrubbed and cut lengthwise into wedges
  • 2 tablespoons canola oil
  • 2 tablespoons Safeway Dijon mustard
  • 2 teaspoons lemon juice
  1. Coat a shallow baking pan with cooking spray. Arrange potatoes, skin side down, in single layer in pan; coat cut surfaces with cooking spray. Combine canola oil, mustard, and lemon juice; drizzle over cut surfaces of potatoes.
  2. Bake in a 400 degrees F oven until potatoes are golden brown and tender when pierced (about 50 minutes).
