- 100g/3½oz butter beans from a can, rinsed and drained
- 1 tbsp wholegrain mustard
- 3 tbsp olive oil
- 1 tsp lemon juice
- sea salt and freshly ground black pepper
- 2 slices french bread
- 1 garlic clove, peeled and halved
- Place the butterbeans, mustard, olive oil and lemon into a food processor and blend until smooth. Season, to taste, with salt and freshly ground black pepper.
- Heat a griddle pan until smoking and place the bread onto it. Griddle for two minutes on each side, then remove and rub with the cut side of the garlic.
- To serve, place the toasts onto a plate and top with the bean pâté.
