Moroccan Carrot-Apple Salad with Cilantro Recipe

  • 2 cups finely diced Cortland apple
  • 1 cup 1 cup grated carrot
  • 8 green olives, pitted and coarsely chopped
  • 1/2 cup chopped fresh cilantro
  • 1 clove garlic, finely chopped
  • 1 tablespoon extra-virgin olive oil
  • 2 1/2 teaspoons lemon juice
  • 1/2 teaspoon ground cumin
  1. Toss ingredients in a bowl. Season with salt and pepper, and serve.
