- 3 (15.5 ounce) cans black-eyed peas, rinsed and drained
- 2 (14.5 ounce) cans chicken broth
- 1 (14 ounce) package turkey smoked sausage, thinly sliced and browned
- 2 cups onion, chopped
- 1 teaspoon crushed red pepper
- 1/2 teaspoon ground red pepper
- 2 1/2 cups Minute® White Rice, uncooked
- Mix peas, broth, sausage, onion, and seasonings in medium saucepan; bring to boil.
- Stir in rice; cover. Simmer 10 minutes or until rice is tender. Garnish with chopped fresh parsley, if desired.
