Minted Cucumber Raita Recipe

  • 1 cucumber, well chilled
  • 1 cup plain nonfat yogurt
  • 2 tablespoons minced fresh mint
  • 1 jalapeño chili, seeded, minced
  1. Peel cucumber. Cut in half lengthwise. Using spoon, remove seeds and pulp. Thinly slice cucumber. Combine cucumber with remaining ingredients. Season to taste with salt and pepper; serve.
